Salmon Chowder
Hello fellow fisherman and you would be wanna be aspiring chefs and cooks. It is I your fanatic fisherman Charterboat Captian and charterboat dwelling Captian Chris coming at you with yet another seafood recipe. This is a fantastic Salmon Chowder recipe that should easily earn you points with your girlfriend when trying to impress her with your cooking skills. I realize that most of you knuckle heads don't have any cooking skills and that's why I'm trying to help you with theses recipes. After all if you knew how to cook you wouldn't be coming here looking for help, but I'm here to help none the less. First of all your going to need some nice salmon. The salmon i am using for this clowder is fresh caught Edmonds Coho salmon that i smoked till fully cooked. But you can use any good salmon, If you don't know how to catch salmon or just cant catch salmon than don't be a cheapskate and book a charter with me!

  1. We'll start with a nice hot soup pan, add 3 teaspoons olive oil Add 4 table spoons raw bacon sliced thin. Sautee bacon until it is 3/4 way cooked. Add 1/2 cup diced celery 1/2 cup diced onion 1clove fresh chopped garlic. Sautee until the bacon is fully cooked. Add 1/2 cup diced raw potatoes. Add 6 cups chicken stock or clam stock. Slowly let this simmer and reduce until the potatoes are cooked, add 1/4 cup cooked corn fresh or frozen. Add 4 cups 1 half and half or milk. In a separate pan melt 1/2 stick of butter and add 1/2 cup flour. Heat and mix. when thick add this and let simmer till it gets thick, finally add 2 cups pre cooked diced or hand shredded salmon. Add salt pepper fresh dill and old bay seasoning to taste. Garnish with fresh parsley or fresh dill, I hope this helps. See you on the water Sincerely, Captain Chris.
